PROCESS

  1. Collect all the dry ingredients. Use a spiral mixer.
  2. Mix for 4 minutes at low speed and 6 minutes at high speed.
  3. Let the dough rest for 5 minutes at room temperature.
  4. Divide into 450g portions.
  5. Bench rest for 10 minutes before shaping.
  6. Ferment for 150–160 minutes at 30°C.
  7. Bake at 190–210°C for 25–30 minutes.
  8. Cool down to 30°C before packing.
