PREPARE THE DOUGH

  1. Place all the dry ingredients into the stand mixer except for the malunggay flakes.
  2. Mix on low speed for 30 seconds.
  3. Add water and mix on low speed for 5 minutes.
  4. Add shortening and mix on high speed for 5 minutes.
  5. Add malunggay flakes and mix till the mixture is combined.
  6. Transfer the dough into a pre-greased container, cover and let it rest for 30 minutes.

SHAPING

  1. Punch dough and transfer onto a pre-greased table.
  2. Divide the dough equally into approximately 30g each, round and smoothen each dough.
  3. Place 10g of cottage cheese and salted egg in the middle of each dough.
  4. Fold the sides of each dough to seal up the fillings.
  5. Roll the dough in breadcrumbs and line up in a tray.
  6. Proof at 30˚C for 45 – 60 minutes.

BAKING

  1. Pre-heat the oven at 170˚C and bake for 20 minutes or until golden brown.
  2. Remove from oven and cool before serving.
